Ravioli with Red Meat Sauce

Ingredients
For the Ravioli:
1 lb fresh or store-bought cheese or meat-filled ravioli
For the Red Meat Sauce:
1 lb ground beef (or Italian sausage for extra flavor)
2 tbsp olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
1 (15 oz) can tomato sauce
2 tbsp tomato paste
1 tsp sugar (optional, to balance acidity)
1 tsp dried oregano
1 tsp dried basil
½ tsp red pepper flakes (optional, for a little heat)
Salt and black pepper, to taste
¼ cup red wine (optional, for depth of flavor)
½ cup grated Parmesan cheese
Fresh basil or parsley, for garnish
Instructions
Cook the Ravioli
Bring a large pot of salted water to a boil.
Cook the ravioli according to the package instructions, then drain and set aside.
Prepare the Red Meat Sauce
In a large skillet or saucepan, heat the olive oil over medium heat.
Add the diced onion and sauté until soft, about 3-4 minutes.
Stir in the garlic and cook for another 30 seconds.
Cook the Meat
Add the ground beef (or sausage) and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
Build the Sauce
Stir in the tomato paste and cook for 1 minute to enhance the flavor.
Pour in the crushed tomatoes and tomato sauce.
Add the oregano, basil, red pepper flakes, sugar (if using), salt, and black pepper. Stir well.
Simmer for Flavor
If using red wine, pour it in and let it cook for 2 minutes.
Reduce heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally.
Combine & Serve
Add the cooked ravioli to the sauce, gently stirring to coat.
Sprinkle with Parmesan cheese and garnish with fresh basil or parsley.
Enjoy!
Serve hot with garlic bread or a side salad.
